This junmai ginjo is made entirely from "Aizan," a rare type of sake rice, for both koji rice and kake rice. It is bottled only once after the tank has been filled. It has the characteristic bright and rich flavor of "Aizan" and a harmonious acidity.
This rare Library Release has been carefully aged for a decade before release. Complex melon notes with hazelnut and an earthiness brought out by extended aging, all, contrasted by a big structure and chewy texture.

To celebrating its 6th anniversary this year, is a high-end collection of limited production that contains a message to the world from Suigei, who continues to challenge himself with his skill and taste every year.
For this sake they use Yamadanishiki rice grown in East Tojo, then carefully select the yeast and use the nakadori brewing method. The result is a superior junmai daiginjo with a invigorating ginjo aroma.
After the pressing has been done, this Sake is aged for a year in 2℃ storage. It resulting premium taste with rich aroma goes well with not only Japanese dishes but French or Italian cuisine as well.
The palest shade of straw possible in the glass, the nose of this sake has rich aromas of pear, rose blossoms, and subtle spice. A very clean, balanced palate follows, with flavors of sweet rice, white grape, and ripe pineapple. Smooth and elegant.
