Senkin Classic represents a refined revival of Japan’s heritage, embodying the spirit of Edo-gaeri, or “return to Edo.” At its core is Kamenoo rice, restored to its original genetic form and cultivated with care, polished in the traditional morohaku style where every grain is fully refined. The process follows the time-honored kimoto method, without the addition of commercial yeast, instead drawing life from native cultures that have thrived in Senkin’s home for over two centuries. Groundwater from the Kinu River completes this natural cycle, bringing purity and vibrancy to a creation that bridges past and present, tradition and innovation.
