Daisekkei, founded in Nagano’s Azumino region in 1898, has long drawn on the pure Alpine water and agricultural bounty of the Northern Japanese Alps to create sake that reflects its origins. Their Ichigo Sake (often labeled “Ichigozake” or strawberry sake) combines local Kaze Sayaka junmai sake—brewed in-house using 100% Azumino-grown rice—with 33 % by weight of premium “Natsuaki Ichigo” strawberries, harvested from late‑summer to autumn for their vivid flavor and balanced acidity. Sweeteners and antioxidant (vitamin C) are added to stabilize and highlight the fruit character, while the sake base lends clean, rice‑driven depth and texture.
In the glass, Daisekkei Ichigo greets the senses with an irresistibly vibrant aroma of fresh strawberries—bright, juicy, slightly tart, and undeniably sweet—underscored by subtle rice undertones and floral nuance. On the palate, it delivers expansive strawberry sweetness with pulp and seeds creating soft texture and luscious fruit body, complemented by gentle acidity and a smooth, mellow finish at around.
