Harushika Junmai Daiginjo is a premium sake from the historic Imanishi Shoten brewery in Nara—founded in 1884 with brewing roots tracing back to the 8th century serving Kasuga Shrine. The label, adorned with graceful calligraphy, reflects the brewery’s deep connection to Nara’s deer deity and its centuries‑old tradition. Crafted in the refined Nanbu Toji style by skilled toji, this Junmai Daiginjo is made from 100% Hyogo-grown Yamadanishiki rice polished to 50%, fermented using Harushika’s proprietary yeast strains (No. 6 & No. 7), and bottled at about 15% ABV with an SMV of –4 and acidity around 1.4—parameters that yield a rich, clean, fruit-forward spirit.
