The “Seppou” moniker—“snow peak” in Japanese—harks to the rugged majesty of Niigata’s mountains, where pure water and Gohyakumangoku rice are polished to 50% for koji and 33% for the mash, then fermented using the traditional Yamahai method with natural yeast. This slower, hands‑on technique imparts complexity and a pronounced umami depth, while the elegant jet‑black bottle reflects the artful blend of urban sophistication and outdoor spontaneity.
On the palate, Seppou Black delivers nuanced tasting notes that evolve gracefully with temperature.
