Sho Chiku Bai Shirakabegura Mio Crisp Sparkling Sake is the latest reinterpretation of Takara’s beloved MIO series—crafted at the esteemed Shirakabegura brewery in Nada, Hyōgo. Rooted in centuries of sake-making heritage, Shirakabegura marries traditional hands-on brewing methods with modern precision to produce this naturally sparkling Junmai sake. Called “MIO”—a Japanese reference to a stream’s gentle ripples and bubbles—this sake embodies effortless enjoyment: only rice, rice koji, water, yeast, and naturally added CO₂, with just 5 % ABV and an SMV of –70. The “Crisp” variant refines the original’s gentle sweetness by dialing up acidity and minerality, giving it an elegant fruit-forward character and creamy mouthfeel .

On the nose and palate, Mio Crisp delights with aromas of honeydew melon, lemon zest, sweet cream, watermelon, almond, and hints of daffodil—lifted by vibrant effervescence and a smooth, rounded texture.
