Chitosetsuru Ginpu Junmai is a proud expression from Nippon Seishu—Sapporo’s oldest and only standing sake brewery, founded in 1872—known for its dedication to showcasing Hokkaido’s terroir. This pure-rice (junmai) sake is made from 100% locally grown Ginpu rice, a variety specifically suited to Hokkaido’s harsh climate. The rice is polished to around 60–65%, and the production utilizes a unique, rich fermentation method devised by a previous generation to extract maximum yeast power, allowing the character of the rice to shine through. With an alcohol content around 15%, this sake is a testament to regional craftsmanship and the harmonious fusion of tradition and place.
