Shishi no Sato Aiyama Junmai Daiginjo Sake is the premium jewel of Matsuura Shuzo, the venerable Ishikawa-based brewery dating back to 1772 in Yamanaka Onsen. Made exclusively from the rare Aiyama rice—dubbed the “Diamond of sake rice”—polished down to 50%, this daiginjo embodies top-tier craftsmanship. Under the watchful eye of 14th-generation brewmasters, the sake undergoes a delicate mash with multiple feedings, followed by gentle pressing (a portion using the cloth-bag drip method) and quick pasteurization and cooling to capture its pristine expression. The resulting spirit reflects the brewery's philosophy: subtle aromas, crystalline flavor clarity, and a powerful yet graceful structure.
