The fragrance is glamorous and mellow, with hints of apple, yellow peach, apricot, quince, and fragrant olive balanced by green bamboo, rice flour, and sakura mochi.
Suigei Brewing produces several Junmai Daiginjo sakes, each with its own character; then combines them to create this entirely unique Junmai Daiginjo that is both aromatic and crisp.
The aroma calls clearly to ripe melon. On the palate, a bit of sweetness, gentle umami and soft acidity, but with a long finish that is well balanced and elegant. Begs to be served in a wine glass in order to fully experience it's unique aromas.

Kijoshu is made by incorporating sake instead of water during the last step of fermentation, lending a sweeter, richer, and more concentrated flavor, similar to noble rot wine.
Senkin Issei is the entry-level sake for their premium series, which are all pressed using the Fukurozuri pressing method (employing gravity to separate pure, clean sake from the mash - a popular method for competition level sake).
Sayuri means "little lily" a perfect description for this soft floral-noted Nigori. This unfiltered sake has a very light nose filled with lush cream, cherry blossom, and light fruit. Semi-sweet palate with a very smooth finish.
Being named “Onikoroshi,” or “Demon Slayer,” which is a common name for dry sake, this sake has a dryness that is accompanied by a wonderful, stoney and mineral flavor that gets more crisp when served cold.
