Crafted by the prestigious Hakutsuru Brewery in the Nada district of Kobe, Tenku Nishiki represents the pinnacle of this centuries-old sake house. It is made exclusively from Hakutsuru Nishiki—a proprietary rice strain developed over a decade to rival Yamada-Nishiki. The rice is polished down to 38% and processed entirely by hand: each grain is bag-washed, soaked with care, heated using the traditional futa-koji method, and pressed naturally through free-drip filtration (shizuku-shibori). Every bottle is serialized to guarantee its artisan quality and rarity. By re-examining every element of sake brewing from the ground up and combining time-honored techniques with modern precision, Hakutsuru has created its highest expression of sake—an achievement that has earned Gold at Kura Master and Double Gold at the Milano Sake Challenge.
