Chitosetsuru (“Nippon Seishu”) is one of the pioneering breweries in Hokkaido, established in 1872 in Sapporo, and remains the region’s only sake brewery today—deeply rooted in local agricultural heritage and soft spring waters. The Suisei Junmai Daiginjo is among the first sakes crafted entirely from Hokkaido’s native Suisei rice polished to 45%. This varietal’s naturally low starch content yields a crisp, impeccably clean sake with excellent structure. Fermented with Kyokai No. 1801 yeast and bottled at 15% ABV (SMV –2, acidity 1.3), it exemplifies precision and regional character.
In the glass, Suisei delights with light, sweet steamed rice aromas leading into nuanced Muscat notes—all supported by a creamy, medium-bodied texture. The finish is pristine and structured, contributing to its refreshing personality.
