Sakari No. 11 Junmai Daiginjo is crafted by Nihonsakari Brewery, founded in 1889 in the famed Nada region of Hyōgo Prefecture—an area celebrated for its pristine Rokko mountain spring water and the skill of Tamba toji brewmasters. Guided by the philosophy that sometimes more can be achieved with less, Nihonsakari polishes premium sake rice to 50% of its original size, allowing the true and rich taste of the grain to shine through. This minimalist approach is elevated by the brewery’s proprietary yeast, which creates an expressive ginjo bouquet while maintaining the unpasteurized vibrancy unique to nama sake. The elegant presentation—complete with the blue label and seigaiha wave motif—reflects the brewery’s balance of tradition and modern refinement.
