Lagoon Sake Brewery is one of Japan’s newest microbreweries, founded in 2021 on the shores of Fukushimagata Lagoon in Niigata, an environment celebrated for its natural beauty and biodiversity. Operating under a special export‑focused license, it aims to infuse traditional sake-making with innovation and local identity. The SHOKU Green Label Junmai uses Kame-no-o, an heirloom, naturally farmed rice variety discovered after a devastating snowstorm — prized for its resilience and unique flavor profile. Polished to 70%, this sake is brewed with meticulous care in ultra-small batches (only a few hundred bottles per run) to highlight the singular character of its rice and terroir. “Shoku” (翔空) means “soaring in the sky,” aptly reflecting Lagoon’s ambition to lift sake appreciation into a new craft stratosphere.
