Lagoon Brewery, established in 2021 on the shores of Niigata’s Fukushimagata Lagoon—one of Japan’s “Top 100 Nature Sites”—is a purpose-built microbrewery created after decades of no new sake licenses. Operating under a license geared toward export, the brewery is committed to ultra-small‑batch sustainability and originality. Its flagship line, named Shoku (翔空, meaning “soaring in the sky”), reflects Lagoon’s aspiration to spread its craft globally like migratory birds, while championing locally grown rice, seasonal ingredients, and wildlife-rich terroir.
The Junmai Takane Nishiki (Pink Label, batch R309) is brewed using premium Takane Nishiki rice polished to 65%, with a four‑stage fermentation process that yields a sweet-yet-balanced profile. On the nose, expect notes of persimmon, fresh musk melon, and banana candy, while the palate is smooth and velvety—underpinned by bright acidity that keeps it crisp. At 16 % ABV and an SMV of –22, it’s best served chilled to preserve its elegant fruitiness. Food pairings are suggested to include Parma ham with melon, tomatoes, or blue cheese, which allow the sake’s richness and acidity to play off savory and creamy flavors beautifully.
