Niizawa Brewery, founded in 1873 in Miyagi Prefecture, set a new benchmark in sake brewing with its Zankyo “Super 7” Junmai Daiginjo 2023. Designed as the pinnacle of purity, the sake is crafted from Kura no Hana rice meticulously polished to just 7%—removing over 90% of the grain over a 350-hour polishing process—making it one of the highest-polished sakes in existence. The term "Zankyo," meaning “reverb” or “vibration,” reflects the producers’ philosophy: to strip away impurities and elevate only the rice’s purest essence. Each annual release arrives in a unique, color-varied box design, and the 2023 vintage has earned acclaim like the Gold Medal in the 2024 International Wine Challenge’s Junmai Daiginjo category.
