Niizawa Brewery, nestled in Miyagi Prefecture since 1873, has long pursued the pinnacle of sake craftsmanship—its mission: creating the “ultimate food‑pairing sake.” With Reikyo Absolute 0, that mission reaches its zenith. In 2018, the brewery achieved a world‑record rice polishing ratio of just 0.85% remaining, meaning 99.15% of each grain was polished away after a painstaking 5,297 hours (221 days) milling process. The remaining core of Kura no Hana rice is delicate yet powerfully pure, then transformed through expert koji cultivation and fermentation into a sake that transcends traditional boundaries. Just 999 bottles are produced annually, each elegantly encased in a handmade Tosa Kumiko box—only three crafted per day—symbolizing both luxury and devotion.
