This Junmai Daiginjo is made from Bizen Omachi rice polished to 48%. When poured into a glass, it has a charming aroma reminiscent of cherries, which alone raises our expectations.
The label sports two rabbits which represent the two opposing flavors that find harmony in this sake. Made with the intent to be competitive across the world, “Yamadanishiki 65” has one of the fullest textures of all the brewery’s lineup.
The citrus yuzu is prized in Japan for its mildly citric taste and incomparably fresh aroma. A native of China, the yuzu came to Japan and is a popular flavor in the traditional Japanese kitchen.
This sharp, super dry sake sports the name Makiri, which translates to “Demon Cutter”. Inspired by the blades of fishermen in Sakata City, which were said to dispel evil forces, Makiri will dispel bad energy from your soul and fill you with inner warmth.
This junmai ginjo is made entirely from "Aizan," a rare type of sake rice, for both koji rice and kake rice. It is bottled only once after the tank has been filled. It has the characteristic bright and rich flavor of "Aizan" and a harmonious acidity.

As they utilize the traditional Yamahai brewing method, this Kubota Hekiju is granted extra deep flavors, yet it still carries a light and clean mouth feel and swallows easily. Best enjoyed at body temperature or chilled.
