Shichiken Hakushin Junmai Daiginjo is a sublime embodiment of Hakushu’s natural purity and centuries-old brewing tradition. Crafted by Yamanashi Meijo in the alpine village of Hakushu, this sake pays tribute to the pristine environment from which it was born. Each bottle captures the essence of Mount Kaikomagatake’s snowmelt and the energy-rich Yumesansui rice, cultivated at the same elevation as the brewery. This rice is polished to an exceptional 27% and brewed in winter, then aged slowly for one year at -5°C, a method that preserves the sake’s ethereal clarity and smoothness. With nearly 300 years of history, Shichiken continues to evolve its craftsmanship while staying true to the region’s most sacred gift: its spring water—untouched, unchanged, and unwavering in purity.
