Established in 1902, Ippongi Kubohonten is renowned for its dedication to traditional brewing techniques and its commitment to quality. The name "Double Moon" is inspired by the Chinese character 朋, symbolizing both "treasure" and "close friend," reflecting the harmonious blend of two premium rice varieties: Yamadanishiki, known as the "king of sake rice," and Sakahomare, a prized local rice from Fukui celebrated for its excellent solubility. This fusion results in a sake that embodies the brewery's philosophy of creating a beautiful new flavor through the collaboration of these two high-quality rice varieties.
