Masumi Shiro Junmai Ginjo, affectionately known as “Matinee,” is a flagship sake from Miyasaka Brewing Company, a historic brewery founded in 1662 in Suwa, Nagano Prefecture. Masumi is celebrated for its discovery of the now-famous Yeast No. 7, which revolutionized sake brewing across Japan. Shiro, meaning “white,” draws inspiration from a soft white cloth made from tree bark, symbolizing its light and buoyant character. Crafted using a blend of Miyama Nishiki rice from Nagano and Yamada Nishiki rice from Hyogo, both polished to 55%, and fermented with Masumi's proprietary No. 7 yeast, this Junmai Ginjo embodies the brewery's commitment to tradition and innovation.
Shiro offers mild aromas of banana and apple, leading into a gently sweet palate brightened by acidity and lingering savory umami.
