Crafted by Tanizakura Shuzo, a brewery founded in 1848 at the southern foot of Mt. Yatsugatake, this sake reflects a deep respect for nature and tradition. The name “Tanizakura,” meaning “valley cherry blossoms,” pays homage to the region’s seasonal beauty. Utilizing locally grown Asahi no Yume rice polished to 65%, the brewery produces this honjozo-style sake by adding a small amount of distilled alcohol to enhance aroma and flavor. As a shiboritate (freshly pressed) and nama genshu (unpasteurized, undiluted) sake, it is bottled immediately after pressing, preserving its bold and lively character.
