Kagatobi Organic Junmai Sake is a pure expression of Fukumitsuya Sake Brewery’s legacy and philosophy. Founded in 1625, Fukumitsuya is the oldest sake brewery in Kanazawa and is exclusively a Junmai-Gura—a brewery that produces only Junmai-style sake using no added alcohol. With a steadfast commitment to quality, Fukumitsuya combines traditional brewing methods with carefully selected ingredients: mineral-rich natural water and exceptional sake rice. The water, known as “Hyakunensui,” originates from the rain and snow of Mt. Hakusan and spends over 100 years filtering through layers of underground rock before reaching the brewery’s well, bringing with it a perfect balance of minerals vital to fermentation. Kagatobi Organic Junmai is brewed with JAS-certified organic sake rice—Yamadanishiki, Kinmonnishiki, and Fukunohana—cultivated through Fukumitsuya’s long-term partnership with farmers that began in 1960 and embraced organic methods in 2006.
Kagatobi Organic Junmai Sake is certified organic in Japan, the U.S., and the EU and offers a fragrant and inviting aromatic profile, beginning with the comforting scent of grains and a sweet note reminiscent of sugar confectionery, such as marzipan. As it opens up, a subtle yet refreshing black pepper aroma emerges, adding complexity and elegance. On the palate, it presents a well-balanced structure—rich yet harmonious—with a rounded texture and a silky mouthfeel.
