Wakatake Onikoroshi Junmai Ginjo, affectionately known as “Demon Slayer,” is a distinguished sake crafted by the historic Omuraya Shuzo in Shimada, Shizuoka Prefecture. Established in 1832, the brewery revived this particular brew in 1975, drawing inspiration from an ancient local recipe once favored by travelers crossing the chilly Ōi River. Using rice polished to 55% and fermented with Shizuoka New #5 yeast, this sake represents a thoughtful blend of tradition and precision. The result is a light, smooth, and rich Junmai Ginjo with a round aroma of steamed rice and chestnuts, subtly layered with fruity notes of banana and melon.
