Gokyo Kioke Zukuri Kimoto Junmai Sake is a masterful expression of tradition and terroir from Sakai Shuzo, a historic brewery founded in 1871 in Iwakuni, Yamaguchi Prefecture. Drawing inspiration from the iconic Kintai Bridge, the Gokyo brand embodies the elegance and resilience of its namesake. This sake is crafted using the labor-intensive kimoto method, where the fermentation starter is developed through natural lactic acid fermentation, and is brewed in traditional wooden vats known as kioke. These techniques, combined with the use of locally sourced Yamadanishiki rice for the koji and Isehikari rice for the main mash, result in a sake that is both rich in heritage and flavor.
