Based in Niigata dating back to 1717, now under the stewardship of Takafumi Aoki, the twelfth-generation. Located in the Uonuma region, renowned for its pristine well water and cold-season brewing (kanzukuri) tradition —a deep harmony connecting producers, sellers, and drinkers—that has guided its craft for centuries. Created by macerating locally grown Koshino Ume plums in their Junmai Ginjo (branded Kakurei), carefully sweetening with rock candy, and maturing over time to allow the flavors to harmonize.
Opens with an inviting bouquet of ripe plum, delicate floral tones, and a hint of gentle rice character. On the palate, the sweetness of the Koshino Ume is beautifully balanced by a lively tartness, creating a poised and refreshing profile. The extended two-year maturation in neutral tanks has softened the edges, allowing the fruit’s natural vibrancy to meld seamlessly with the depth and elegance.
Best enjoyed well-chilled, this ume-shū makes an elegant aperitif but also complements desserts—especially fruit-based sweets—by echoing soft sweetness and a hint of acidity.
