Shishi no Sato “Sen” Junmai Ginjo Sparkling Sake is crafted by the esteemed Matsuura Shuzō, a historic brewery founded in 1772 in Yamanaka Onsen, Ishikawa Prefecture—an area renowned for its hot springs and artisanal traditions. Led today by the 14th-generation brewmaster Fumiaki Matsuura, the brewery is known for producing sakes of subtle elegance and structural refinement. The “Sen” is made from Yamada Nishiki rice polished to 55%, qualifying it as a Junmai Ginjo, and undergoes natural in-bottle (secondary) fermentation to develop its fine, delicate effervescence.
