Chochin Shuzo, founded in 1868 and located in Tsushima City at the western edge of Aichi Prefecture, is known for its dedication to meticulous, artisanal sake-making, led by perfectionist brewer Masayuki Kuwayama. The brewery uses mineral-rich, hard water sourced from wells within the facility—filtered only through underground seashell layers—imbuing its sake with a firm acidic backbone and excellent aging potential. The “Shinbunshi” label, meaning “newspaper,” refers to the distinctive packaging of this line—wrapped in local Tsushima newspapers, reflecting both local pride and handcrafted charm. This particular expression—Junmai Ginjo Nama Genshu Hattanishiki 60 Shinbunshi—is unpasteurized (nama), undiluted (genshu), and polished to 60%, made from Hattanishiki rice and offering a full-flavored, uncompromised tasting experience.
