One‑Ten (“110”) Purple Yamahai Junmai Ginjo is crafted by Hayashi Honten, a boutique sake maker in Gifu Prefecture. The brand was founded by Reiko Hayashi, inspired by the legendary kabuki actor Hyakujyuro, and named “One‑Ten” as a symbolic message of peace and harmony she wished to share through sake. The brewery employs the traditional Yamahai method—an early‑20th‑century technique that forgoes mechanical mashing, cultivating naturally occurring lactic acid to foster fermentation. This labor-intensive process yields a rich, umami-heavy character rarely found in modern sake. With rice milled to 60% and the use of Gohyakumangoku rice, One‑Ten Purple stands as a refined expression of terroir and artisan tradition .
