Hizo Otokoyama—literally “Hidden Man’s Mountain”—comes from Kitaya Corporation and represents a storied heritage of sake brewing rooted in Fukuoka Prefecture’s pristine terroir. Crafted using premium Japanese rice varieties Hinohikari and Yumetsukushi, polished to approximately 60% for this special junmai grade, each bottle delivers a harmonious blend of traditional technique and Hokkaido-born freshness. With an ABV of around 15–16%, acidity of ~1.5, and a sake meter value (SMV) of +4, this Tokubetsu Junmai is intentionally robust, crisp, and distinctly dry—designed to complement Japanese cuisine while showcasing Otokoyama’s reputation for clean, rice-forward character.
The sake is bold and rice-forward—rich yet refreshingly dry—with crisp acidity and a lingering mineral finish that reflects its clean viscosity.
