Established in 1772 in the mountain town of Yamanaka Onsen, Ishikawa Prefecture—an area celebrated for its hot springs and traditional artisan culture. Now led by 14th-generation toji Fumiaki Matsuura. Crafted with Dewasansan and Gohyaku Mangoku rice polished to approximately 65% and fermented using Kumamoto yeast, this “chokara” embodies the “super-dry” Onigoroshi (“demon-slaying dryness”) tradition, offering exceptional clarity, brisk dryness, and a clean, expressive profile that pulls rather than coats.
On the nose, unfolds with crisp aromas of pear, lemon, and subtle almond tones, hinting at its nutty depth. The palate is immediately distinguished by its bone-dry, spicy backbone—supported by bright, citrus-tinged acidity and a firm, lingering finish that emphasizes its minimalist elegance. There’s an underlying umami richness that balances the sharpness, creating a sake that is vibrant yet grounded, with a clean structure that carries each flavor impression with precision and finesse.
