Crafted by Niizawa Brewery in Miyagi Prefecture, Hakurakusei is celebrated for pioneering the modern concept of “food‑pairing sake” (shokuchūshu), aiming to enhance every dish it accompanies. Brewed under the guidance of fifth-generation brewer Iwao Niizawa—Miyagi’s youngest certified toji in 2000—the brand launched in 2002 and has sustained its commitment to supporting meals rather than overpowering them. The Junmai Ginjo is milled to 55% using locally revered Kuranohana rice and brewed with precise temperature-controlled steaming and koji techniques after relocating to a modern facility in Kawasaki Town post-2011 earthquake.
