Morishima Shuzo “Yamada‑Nishiki Modern Classic” Junmai Ginjo emerges from the coastal town of Hitachi in Ibaraki Prefecture, where Morishima Brewery’s 150-year legacy meets contemporary brewing ingenuity. Under the guidance of sixth-generation toji (master brewer) Shoichiro Morishima—the first certified Nambu‑Toji in the family—the brewery rebuilt and revitalized its stone-walled facility after wartime destruction and the 2011 Tōhoku earthquake, reinforcing its dedication to resilience and tradition. Brewed using 100% Yamada‑Nishiki rice polished to 60%, fermented with Kyokai #901 yeast, and pressed slowly over low temperatures, this sake is bottled fresh and carries a slight, lively effervescence upon opening.
On the nose, it offers crisp, inviting notes of fresh strawberries and bright orchard fruits, complemented by a clean, saline whisper reminiscent of nearby ocean breezes .
