For over a century, Kikkawa Jōzō, nestled at the foothills of Mount Afuri in Kanagawa Prefecture, has specialized in crafting distinct, terroir-driven sake. Their acclaimed “Foggy Day” (#28) is a Nama Junmai brewed using locally sourced Bizen Omachi rice polished to 90% and fermented slowly at low temperatures with yeast No. 28. This yeast strain accentuates malic acid, lending the sake its signature tart-apple freshness. The brewing water—naturally mineral-rich from rain-fed mountain springs (about 150 ppm)—combines with a portion of lees retained post-pressing to produce a lightly cloudy, delicately effervescent “Kasumisake.” The bottle develops a fine mousse in-bottle, inviting careful opening and gentle inversion to evoke the iconic “Foggy Day” haze.
