Dassai Future With Farmers is a truly pioneering sake born from a spirit of sustainability and innovation at Asahi Shuzō in Yamaguchi Prefecture. Rather than discarding imperfect Togai Yamada-Nishiki rice—rice rejected for its irregular shape or lack of a well-defined starchy core—the brewery embarked on a daring challenge: polishing it down to just 8% of its original grain size, a rate even more extreme than their flagship 23-percent polishing ratio. This process, spearheaded by Shoji Ide, was so delicate that it required combining rice from multiple polishing machines into one and took roughly 10 days—about 2.5 times longer than usual. The result is a sake that not only uplifts underutilized rice and supports farmers, but also embodies Dassai’s dedication to craftsmanship: a rare Junmai Daiginjo of remarkable clarity, complexity, and meaning.
This Junmai Daiginjo opens with a refined bouquet of cantaloupe, pear, strawberry, and rice bran, leading to a velvety, rounded palate with gentle sweetness and a lingering, elegant finish. Best served chilled (8–12°C), it pairs beautifully with delicate seafood, sashimi, scallop carpaccio, or lightly salted tempura, allowing its purity, depth, and umami to shine.
