Yuki No Bosha is crafted by Saiya Brewery, founded in the snow-laden Akita region (Akita Prefecture, Tohoku) and helmed today by master toji Takahashi and the Saito family. The brewery, established in the early 1900s, emphasizes purity and precision—a philosophy reflected in this Junmai Ginjo. It is made from Akita Sake Komachi rice polished to 55% and fermented using the brewery’s proprietary house yeast. Every production step—especially rice washing, koji cultivation, and low-temperature fermentation—is executed with meticulous discipline under Takahashi’s watch, ensuring minimal air exposure, no charcoal filtration (muroka), and no dilution (genshu) to preserve a clean, expressive sake.
On the nose, Yuki No Bosha Junmai Ginjo greets with delicate aromas of peach, strawberry, and white flowers, followed by subtle anise and floral lift. The palate is smooth, refined and fruit‑forward, with juicy mango and melon notes balanced by a crisp acidity and a white pepper spice on the finish.
