Nestled in the snow-rich rice plains of Akita Prefecture in Japan’s Tōhoku region, the Akita Brewing Company—creator of Akitabare Daiginjo—maintains a “Koshiki Junzukuri” approach (“old way, great care”), masterfully combining century-old wooden vats and steaming tools with modern precision. Despite the advances of sake brewing, Akitabare remains steadfast in its philosophy: “fierce adherence to tradition, skillful adaptation to change,” producing sake that is delicate yet expressive, balanced yet focused. For Winter Blossom, premium Akita-grown Gin no Sei rice is polished to 50% and fermented at low temperatures for up to 25 days using Akita‑Yukiguni yeast—a process faithfully executed in small batches to preserve clarity, nuance, and structural harmony.

At first encounter, Winter Blossom greets the palate with a gentle floral‑fruited nose reminiscent of apple and melon, rice candy sweetness, and warm honeyed rice essence. On the tongue it unfolds with a supple, velvety body: delicate pear and soft kasutera cake nuances give way to creamy umami tones and subtle cupcake‑icing and pear skin spice, all supported by a smooth, clean, and even finish.
