Now led by the 18th generation of the Niida family, Odayaka exemplifies their Shizenshu philosophy: sake made exclusively with 100% Fukushima-grown, pesticide‑free Shizenmai rice, natural well-spring water, and only in‑house kimoto yeast starters—no added lactic acid and absolutely no chemical inputs. Odayaka’s rice is polished to 60% for Junmai Ginjo balance, aged gently in stainless steel to preserve nuance, and emerges at approximately 15–16% ABV with an SMV (sake meter value) of +1.0.
