Crafted by Hirako Shuzo in Ishinomaki, Miyagi Prefecture, Hitakami Chokarakuchi Junmai is part of the Hitakami line named after the historic Kitakami River region—long celebrated for its seafood and sake traditions. Brewed exclusively with 100% Hitomebore rice polished to 60%, this junmai sake embodies precision and regional identity. The brewery’s philosophy is deeply rooted in pairing sake with the pristine seafood of Sanriku Bay: their goal is to cleanse and elevate the flavors of fish with a super-dry, structured brew that reflects decades of experience.
This sake measures around +11 on the SMV scale, placing it among the driest of junmai styles. It offers a crisp, structured profile with bright acidity, layered umami, and a clean, sharp finish that stays transparent and refreshing on the palate. Aromas suggest subtle notes of wet leaves and yellow apple, behind which lie hints of pineapple and mushroom for added complexity.
