As a brewer steeped in tradition since 1850, Suehiro was the first to formalize the toji role and popularize the yamahai method, and Ken Daiginjō reflects their unwavering commitment to expressive, terroir-driven sake. Made from Yamada Nishiki rice polished to around 40–50%, this brew emphasizes crisp precision and elegant refinement.
