Product details

Woodinville Whiskey Co. was founded by two friends, Orlin Sorensen and Brett Carlile, united by the dream of proving that world‑class whiskey doesn’t need to come from Kentucky—or Scotland—but can thrive in Washington State. They partner with the Omlin family farm in Quincy, WA, to grow 100% estate‑grown rye, which lies dormant under winter snow and is hand‑irrigated through scorching summers. Nearly a year later, the grain is harvested and trucked over the Cascades to Woodinville for milling, mashing, and pot distillation—all done by hand in small batches. The spirit then returns to Quincy to age for eight years in heavily toasted, deeply charred American oak barrels with 18‑month open‑air stave seasoning. This unhurried, grain‑to‑glass approach embraces inefficiency in favor of craftsmanship, yielding rich, terroir‑driven whiskey infused with the character of Washington’s seasonal extremes.

At 100 proof (50 % ABV), this Limited Edition rye opens with inviting aromas of dark molasses, clove, and brown sugar, giving way to warm baking spices like cinnamon and vanilla, accented by a hint of dried cranberry. The palate is bold yet refined: expect notes of cinnamon‑chocolate‑mocha pastries layered with espresso and mocha, toffee, caramel, green apple brightness, and peppery oak. As one reviewer put it, “fruit pie crust notes…drizzled in vanilla bean” balanced by dry oak, leather, tobacco, and baking‑spice warmth through a long, fiery finish. This whiskey is designed for sipping neat or with a few drops of water to unlock its full complexity. It also elevates cocktails like the Old Fashioned or Sazerac—transforming classic recipes with its rye‑spice and dessert‑like richness. Pair it alongside rich chocolate desserts, spiced nuts, or aged cheeses like Gruyère or Manchego to echo its toffee, caramel, and dried fruit layers. The warming spice and oak structure also make it a great companion for smoked meats or hearty winter dishes.
