This sake has a gentle and delicate aroma - like a flower - and a soft sweetness. Soubei Wase does not have the ‘flashiness’ of more recently developed sake rice; rather, it gives you a sense of refined rustic beauty.
There are many products which are made with 20% polished Yamadanishiki rice around, but BLACK LABEL 35 is the only one that uses Omachi rice in Japan. This is their finest and highest quality premium product.
Akitabare Suirakuten Junmai Daiginjo’s rice polishing ratio is 40%, and acidity is 1.2. It carries joyful notes of peach and melon, and ends with a resolute finish. It’s best served at 55 degrees, and still drinkable when it’s warmed to room temperature.
This one is something uncommon in the sake world—a blend of multiple batches of different sake! They all use the same rice and water so there is some consistency, but it’s still quite complex.
