Product details
Isojiman Nakadori 33 Grazioso Junmai Daiginjo represents the refined craftsmanship of Isojiman, a renowned producer from Shizuoka known for its meticulous attention to rice selection and production. Made exclusively with premium-grade Yamada Nishiki rice cultivated in the Akitsu area of Tojo, Hyogo Prefecture, the rice is carefully polished to retain just 33% of its original grain. The koji is developed over approximately 70 hours, while the producer’s proprietary yeast is cultivated using local seaweed, contributing a distinctive character to the finished profile. The traditional wooden fune press is used to separate the liquid, with only the prized nakadori portion selected. Every stage reflects an exacting approach that brings together precision, patience, and the distinctive identity of Isojiman.
A refined texture carries elegant herbal and tropical fruit notes, complemented by a subtle saline character on the finish. Its poised balance and delicate complexity make it a particularly appealing match for seafood.
