Product details
Aramasa Yama-yu Junmai Ginjo reflects Aramasa’s commitment to exploring the distinctive character of Akita-grown rice varieties. This expression highlights Kaizen Shinko, a historic rice variety developed in 1959 from Shinko 190, which shares a parent variety with Miyama Nishiki but follows a different selection history. After cultivation of Kaizen Shinko had temporarily ceased in Akita, the producer undertook the challenging work of obtaining seeds and restoring its cultivation, eventually harvesting enough rice for two production batches. The resulting release, known as Momo Yamayu, surpassed expectations with a distinctive character that helped shape Aramasa’s growing commitment to using rice cultivated entirely within Akita Prefecture. This dedication to rediscovering regional rice varieties reflects the producer’s innovative approach to traditional Japanese craftsmanship.
Aramasa Momo Yamayu is distinguished by a flavor profile reminiscent of fully ripened peaches, an expressive character that sets Kaizen Shinko apart from other rice varieties. Its distinctive, fruit-inspired character reflects the unique qualities of this historic Akita-grown rice and the producer’s careful exploration of its potential. The result is a memorable expression that brings together regional agricultural heritage and a forward-looking approach to flavor development.
