Product details
Juyondai Bankoh Daiginjo Shizuku Tobintori is a refined limited expression from the renowned Juyondai collection, distinguished by its careful selection and extended maturation. The name “Bankoh,” meaning “Myriad Rainbows,” symbolizes auspiciousness, prosperity, and the hope for abundant times. This Daiginjo is selected from premium batches and matured for approximately two years at an ultra-low temperature of −6°C to develop greater integration and refinement. Its Shizuku and Tobintori designation refers to a collection method in which the liquid is allowed to drip naturally into a vessel rather than being extracted through conventional pressing, highlighting the care taken in its preparation. The result reflects Juyondai’s focus on precision, patience, and a harmonious expression of its ingredients.
The tasting profile features an elegant ginjo fragrance and a rounded, well-integrated flavor. Extended ultra-low-temperature maturation contributes to a smooth, cohesive character, while refined sweetness brings richness without overwhelming the palate. For serving, enjoy well chilled at approximately 5°C. Suggested food pairings include kaiseki, kappo cuisine, shojin ryori, and other delicately seasoned Japanese dishes.
