Chiyomusubi Junmai Daiginjo Gaina is an exceptionally refined expression from Chiyomusubi Shuzo, a historic producer based in Tottori Prefecture, Japan. The name “GAINA” comes from a Tottori dialect adjective expressing something “big” or “remarkable,” reflecting the producer’s vision of creating an exceptionally clear and polished profile. Made from Yamada Nishiki rice polished to 15%, GAINA uses the rare Nakadori portion—the most carefully selected middle portion obtained during pressing—and is bottled in an extremely limited quantity. After bottling, it undergoes ultra-low-temperature maturation in a temperature-controlled environment at Chiyomusubi Shuzo, allowing the carefully selected character of the Nakadori portion to develop with precision. Its pure-white presentation, created in collaboration with a calligrapher, incorporates avant-garde calligraphy inspired by the concept of “pure white,” expressing the meeting of tradition and innovation behind GAINA.
