The brewery’s philosophy centers on careful craftsmanship and creating expressions that work naturally alongside food, with particular attention to precision and consistency. Shinsei Daiginjo is personally crafted by Toji Minoru Ochi and showcases the distinctive Shizuku method: instead of applying pressure, the liquid is allowed to collect naturally as it gently drips from bags, then is gathered in special storage bottles. This meticulous approach highlights the brewery’s dedication to preserving the refined character of its premium Daiginjo, while the Muroka Genshu style presents its naturally expressive profile with minimal intervention.
