Kagatobi Sennichi Kakoi Junmai Daiginjo is a carefully matured expression from KAGATOBI, a brand inspired by the celebrated firefighters of Kaga who served the Kaga domain’s Edo residence and became known for their skill, strength, and distinctive spirit. Made exclusively from contract-grown Yamadanishiki rice and local groundwater, this Junmai Daiginjo was aged at low temperatures for 1,000 days, allowing its character to develop gradually over an extended period. The commemorative Nishiki-e label features Mekura Nagaya Ume ga Kaga Tobi, adding a traditional visual element to this distinctive KAGATOBI release. Its long maturation and carefully selected ingredients create a full-bodied, well-balanced profile with notable depth and maturity.
