Product details

Aramasa Itankyoso Kabushiki Kaisha The Heretic & Co 2023 is an unconventional limited release from Aramasa’s prestigious Astral Plateau collection, created to challenge established expectations through distinctive ingredients and an experimental approach. This special edition, prepared for Craft Sake Week, features rice from the 2023 harvest season and is collected using the gentle Fukuro-hozuri method, which allows the liquid to be obtained without applying pressure. Its production incorporates a generous proportion of white koji, prized for its high acidity, alongside carefully selected pesticide-free rice and maturation in Japanese mizunara oak barrels. After collection, the release is aged for one year under refrigerated conditions, bringing together unusual ingredients and a carefully considered maturation process in an expression that reflects Aramasa’s exploratory philosophy and commitment to distinctive craftsmanship.

The tasting profile is characterized by pronounced acidity derived from the generous use of white koji, creating an aromatic and flavor profile that stands apart from more conventional expressions. The combination of carefully selected rice, pressure-free collection, and maturation in Japanese mizunara oak contributes to its distinctive character and layered complexity. This 2023 special edition offers an intriguing exploration of Aramasa’s experimental approach, emphasizing the interplay between lively acidity, rice-derived depth, and the influence of oak maturation.
