Seikyo Omachi Junmai Ginjo is crafted from Omachi rice, a heritage grain discovered in 1859 and revered as the oldest of its kind in Japan. Unique among rice varieties, Omachi remains non-crossbred, with over 70% of modern premium rice strains tracing their lineage back to it. Though notoriously challenging to cultivate—growing more than 5.4 feet tall and highly susceptible to insects—it rewards the effort with impressively large grains and a soft, generous core.
