Born in Tochigi Prefecture, the Modern series represents Senkin’s philosophy of “Edo-gaeri,” a revival of classic Edo-era craftsmanship reinterpreted through a contemporary lens. This Ichishiki edition embraces the kimoto starter method, a traditional practice that brings natural depth and character, while remaining free of any additives. Every element comes from the land itself—rice grown locally in the Sakura region and pure subterranean water drawn from the Kinu River. A single careful pasteurization preserves its freshness and clarity, ensuring stability without sacrificing the vivid expression of its origin.
The profile is delicately layered, opening with bright aromas of La France pear, melon, muscat grape, and lychee, accented by a subtle nuance reminiscent of Sauvignon Blanc. On the palate, it is soft and airy, never heavy, with a graceful balance where gentle fruit sweetness is lifted by refreshing acidity.
